These banana cupcakes are perfect to do with the kids for a yummy treat without all the additives and artificial flavourings. I also love this recipe as its a perfect way to use up the ripe bananas that we haven’t managed it eat.

Ingredients:
100g sugar (granulated white sugar or caster sugar is fine)
140g self-raising flour
100g butter (softened)
2 medium eggs
1tsp vanilla extract (optional)
3 very ripe bananas
I hate throwing away food so it’s great that in this Banana Cupcakes recipe over ripe bananas do not go to waste and it still tastes great!
It is super easy and the prep is only 10 mins and baking takes only 15 mins approx.
Method:
Mash the bananas in a bowl with the back of a fork until they are mushy with very little lumps.
Weigh out all the ingredients and add them all into a mixing bowl. Combine all the ingredients to make the cake batter.
Add the mushed bananas to the cake batter and mix well.
Scoop out into individual cup cake cases for little treats.
Bake in a pre heated oven at 180C/ fan 160C/ 350F for approx 15 mins. The tops should go a nice golden brown colour.
Leave to cool and then enjoy!
